you’re giving yourself loads of time to plan the trip.
It depends on what you like, if its history, well then you are spoiled for choice. Do the bus tour, tour guinness, go to Kilmainham Gaol, the museums are free, and good. the liffey splash is good aswell.
If i were you, I would go to a concert or try take in a gig.
The zoo is good too.

For interesting things to do buy a bus ticket that allows you to get on/off throughout the day in Dublin.
Drink, drink and drink some more! altho take plenty of cash as its expensive.
